Roast Chicken Thighs with Lemon and Mint

Instructions
  1. Heat the oven to 400 degrees F
  2. Place the chicken thighs and lemon wedges in a roasting tin, drizzle the oil over and season
  3. Roast for 25 minutes or so, until golden and cooked through
  4. Mix the mint leaves with the garlic and the lemon juice, and pour over the chicken
  5. Remove skin and serve
