Ingredients
- 6 bone-in and skin on chicken thighs
- 3 lemons 2 cut into wedges; 1 juiced
- 2 tbsp olive oil
- 1 handful mint leaves roughly chopped
- 1 clove garlic very finely chopped

Instructions
- Heat the oven to 400 degrees F
- Place the chicken thighs and lemon wedges in a roasting tin, drizzle the oil over and season
- Roast for 25 minutes or so, until golden and cooked through
- Mix the mint leaves with the garlic and the lemon juice, and pour over the chicken
- Remove skin and serve
