Horseradish Mayonnaise
- 1/4 cup mayonnaise or vegan mayonnaise
- 1/4 cup greek yogurt
- 1 to 2 tsp horseradish grated
Beef Lettuce Wraps
- 4 large leaves romaine lettuce
- 8 slices roast beef
- 1 apple sliced into matchstick size pieces

- fresh herbs i.e. thyme or dill

Instructions
- Make the horseradish mayonnaise by mixing the mayonnaise, yogurt, and horseradish in a small bowl. Set aside, or refrigerate until ready to use.
- Place lettuce leaves on serving dish.
- Top each lettuce leaf with 2 slices roast beef, 1/4 of the apple slices, horseradish mayonnaise, and fresh herbs.
- Serve immediately or keep tightly sealed in refrigerator for up to one day.
