Instructions
  1. Preheat oven to 425 degrees F
  2. Season the sweet potatoes and Brussel sprouts with salt and pepper. Drizzle lightly with olive oil. Roast until brown, about 30 minutes.
  3. Add all salad ingredients together
  4. Whisk the dressing up in a small bowl, or run it through the food processor until smooth
  5. Drizzle with sunflower dressing. Toss and enjoy
