Chicken, Barley, and Leek Stew
  1. In a large skillet cook chicken in hot oil until browned on all sides
  2. In a 4-5 quart slow cooker combine chicken, chicken broth, barley, leeks, carrots, dried basil, and pepper
  3. Cover and cook on low-heat setting for 4-5 hours or on high-heat setting for 2 to 2 ½ hours or until barley is tender
  4. If desired, sprinkle with fresh basil or parsley before serving
