Ingredients
- 3 cups riced caulflower
- 1 cup riced broccoli
- 1 tbsp Butter
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 tsp garlic powder
- 1 pinch ground nutmeg
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup mascarpone cheese

Instructions
- Combine the cauliflower, broccoli, butter, salt, pepper, garlic powder, and nutmeg in a medium sized microwave safe bowl and microwave on high for 4 minutes. Stir
- Microwave for an additional 2 minutes. Stir
- Add the cheddar cheese and microwave an additional 2 minutes
- Remove from the microwave carefully stir in the mascarpone cheese until creamy and fully incorporated
- Taste and adjust seasoning as desired
