Ingredients
2 peeled and grated carrots
2 cored and diced apples
2 diced ribs of celery
½ cup of fat-free lemon yogurt
6 chopped dried figs
2 tablespoons of almonds
Directions
Start by combining celery, figs, and apples in a small bowl. Next, add yogurt to the mixture and mix thoroughly. Garnish the salad with grated carrots and almonds and serve immediately. Serves 6.

Pumpkin Soup
Ingredients
¾ cups of water
1 small chopped onion
1 chopped green onion
1 can or 15 ounces of pumpkin puree
2 cups of unsalted vegetable broth
1 cup of fat-free milk
½ teaspoon of ground cinnamon
¼ teaspoon of ground nutmeg
⅛ teaspoon of black pepper
Directions
In a large saucepan, heat ¼ cup of water over medium heat. Next, add onion and cook it until it is tender. Be sure to pay close attention to the onion to make sure it doesn’t dry out.
Next, add the remainder of the water, broth, pumpkin, nutmeg, and cinnamon. Bring the saucepan to a boil, reduce the heat and simmer for 5 minutes. Stir in the milk and cook until hot but do not boil. Add the soup into bowls and garnish the top with green onion and black pepper. Serve immediately. Serves 4.

Vegetarian Cornbread Stuffing
Ingredients
1 large beaten egg
2 diced leeks
3 cored and diced apples
4 cups of crumbled gluten-free cornbread
¼ cup sherry or port, divided
1 tablespoon of poultry seasoning
1 cup of chopped pecans
3 cored and diced apples
8 finely chopped celery stalks
1 peeled and diced celery root
2 tablespoons of olive oil
1 teaspoon of white truffle oil
Salt and pepper to taste
Directions
Start by heating the olive and truffle oil in a pan over medium-high heat. Then, add leeks and sauté for 3 minutes until they are slightly golden. Next, add celery root, celery and apple one at a time, cooking for 3 minutes after each addition. Then, add seasoning, salt and pepper, and pecans and sauté for 2 minutes in order to infuse the flavors. Pour in 2 tablespoons of sherry and cook for another minute. Allow the whole mixture to cool for 10 minutes.
Preheat the oven to 350 degrees. Place cornbread into a large bowl and add in the egg, veggies, and remaining sherry. Transfer the mixture to a glass baking dish, cover, and bake for 45 minutes. Lastly, uncover and brown for 10 more minutes.
